I think your idea about starting with a simple project is a really good one. Why not start with something like Project Puppet's "Sock Puppet" pattern?

BTW, I am not 100% sure but I believe that what you saw on their site was not the actual puppet in the DVDs but a Big Bird photo model from several years ago.
