Big Bird was concerned since he was told never to jump off a moving vehicle. But Gordon convinced him too do it. If not, he'd still be in the sleaze brother's cage as we speak.

Big Bird: Gordon, I'm not supposed to do this! You should never jump from a moving truck! Why, I shouldn't even be standing up!
Gordon: You have my permission! Just this once. Now, Come on!

The other great moment that someone else here mentioned was the end of Christmas Eve On Sesame Street. Gordon teaches Big Bird that Christmas isn't about presents or no presents. It's more about being together with the people you love.
Big Bird: It's important, Gordon.
Gordon: No, Big Bird. That's not what's important. What is important is that we lost you tonight and we were all very very worried about you. And now we have you back safe and sound, and we're all together for Christmas again. And if that isn't a True Blue Miracle, I don't know what one is."

Gordon was and is a great teacher and surrogate parent. He had the ability to act firm but still nurturing at the same time. He was tough sometimes, but never mean or threatening.
