Yes, I would have loved to see John Ritter guest star in an episode. It seems they tried to correct their error by having him appear in The Fantastic Miss Piggy Show, but it was just not the same. Suzanne Somers, Richard Kline, or Joyce DeWitt would have fit in perfectly as well.

Outside of Three's Company, it would have been neat to see '70s-era Michael Jackson in an episode. He was already in a Sesame Street Christmas special.

And the biggest missed opportunity is the fact that Richard Pryor was unable to make it to his taping, that might have been one of the greatest episodes. At least he made a cameo in The Muppet Movie.

Or Norman Fell or Audra Lindley.
