Unless you are putting your own show together, using your own money, this isn't a puppet town.
L.A. and NYC are where you want to be if you want to make money as a builder and/or performer.
I've been experimenting with latex. It is great stuff. While it is time consuming at the beginning (design and sculpt the head, cast it in hydrocal or ultra cal, cast the foam latex, screw it up, do it again), you will have the molds available to use again.
And I generally hate hand sewing...

You want to use foam latex for puppet building. The mask making latex doesn't expand when it cures.

Depends on the character. Is this an excitable bird? Then wings would be good. Is this a sarcastic bird? Then eyes would play a bigger part. And these are just real general ideas.
Decide what the bird's character is going to be then make the choices that will help develop that character.
For the family? Not much really. Some of the local, small, not-for-profits might have a children's show on the weekend that might involve puppets, but there's nothing that stands out puppetwise.

It's an ill-fitting shirt (and not a great color), the eyes aren't well focussed and there are no gaps in the teeth (which isn't a big deal but tossing it out there).

I think the best way to learn to make good bodies is to get some cheap 1/2 inch foam and start cutting different size wedges and darts and such, glue them together and see what it looks like. Eventually, you'll figure out what works and what doesn't.
Making money is the ONLY reason any movie gets made in the first place.
"Ghostbusters" won't happen unless Columbia Pictures/Sony Pictures pays a huge amount to Bill Murray, Harold Ramis and Dan Ackroyd. it was in the original contracts. That's why there hasn't been a third movie.
