I think it's always been said that they've just been playing roles in their other movies, what surprises me is that they're saying that they were just acting during TMS too.

Not necessarily. Just because he has a pic of it doesn't mean it was a real wedding, or it could be a different wedding. Not to mention, this is all just a movie, so maybe in this movie's universe, they are, but that doesn't mean they are in real life.
I think he probably would be just a normal pig, except that he would be green, with glasses and no eyes, like the original Bunsen. Of course, no eyes would probably be hard to make, so...
