I went to the collectibles section on MC, and I clicked on "Coloring and Activity Books" and it was only listed up until 1999. I have found a coloring book that unfortunately has not been listed.
It was published in 2002, by Big Tent Publishing. It still carries the "Jim Henson Muppets" Logo...
