The Muppets never really showed Jim as a character in the series. (Aside from as a puppet.) Part of Lamb Chop and her friend's charm was that they interacted with Shari as well as each other. When she died, one of the characters in the group died with her. The Muppets found replacements for their voices, but it is considerably harder to replace a human character.
Lamb Chop and Friends can still exist without a human friend. The characters can have their own story adventures liked they did in "Lamb Chop's Play-Along".And Vic, Lamb Chop is known all over the world, and with merchandise.Lamb Chop just needs another TV show or Movie to return to people's minds.Go Lamb Chop!

Hot Topic recently had a Lamb Chop hand puppet which was beautiful and looked nearly 100% like the real one. I then searched out and got a Hush Puppy and Charlie Horse hand puppets as well. Finally, several years ago I found some little PVC figures of the three which stand about 3 inches tall, and I have those with my Palisades Muppets.

For a quite a period of time, our local IHOP would sell little knick-knacks on the way out of the store (sort of like a very small and very pathetic gift shop for tourists). Anyway, for quite a while there, they had a whole line of Lamb Chop merchandise like hand puppets, plushies, beanies, plush key-chains, etc, they were so cute.

There was quite a lot of merchandise released in the early ninties.Direct Connect(who also made Muppet products) made the puppets and also dolls and Blue-Box made figure gift sets,Tree House Playland,Buster the Bus and a Melody Maker Train.Ertl even made the characters in cars.My favourite is Mr.Bearly in Space Shuttle!!!

Obviously, the items you mentioned are different again from the earlier items that came out that I mentioned. So the merchandise continues.
