I assume you meant to include the letter sketches on "Learning about Letters"...otherwise, the candidates you listed are well-known enough to preserve on DVD, all right.

My own bonus-track candidates

The VERY early "letters vs. numbers" sketch (in which a crowd of Anything Muppets is divided into two teams, one with assorted letters on their sweaters and one with assorted numbers); this could theoretically go on both disks

"A, B, C, D, E, F, Cookie Monster": only Jim Henson could use a little girl's one-track mind as part of an alphabet sketch!

"1-20 Destroyed": a cartoon sketch in which each number is destroyed differently (Cookie Monster's "SEVENTEEN!" is priceless in my opinion)...

So many decisions. But if I were in charge I would say:

Learning About Letters

Letter B (The Beetles)
The E Song (with the haunting sitar and violin combo)
Psychedelic H (Computerized Animation)
The Letter N (Nick Normal and The Nick-Matics)
Grover's R Lecture
Thinking Of U (The Beetles)
X Marks The Spot (Sherlock Hemlock)
The Zany Zesty Zippy Zingy Zig Zag Dance

Learning About Numbers

Swedish Animation for any number
Jazzy Spies for any number
Pinball Number Count for any number
The Baker for any number
Ringmaster for any number

Oh how enjoyable that would be.
