I'm curious though as to why some puppets (including this one) have like an extra piece of foam running down the back of the head?

I'm not really certain what you are asking, but I'll try to answer. The seam on the back is because I used an older foam pattern- it has four parts to it. I used this pattern so I could use up all the "leftover" foam I had, they (the foam bits) were smaller and couldn't be used with the newer- two/one piece foam patterns I have. I hope this answers your question.
