Well, I'm not Aussie. But my spectulation is that "It's Sydney of the bush" could refer to how a lot of people (this may be true, no idea) believes that Australia is either completely metro (like New York in terms) or completely sparse, only populated by Aubrigoines. (hence "the bush")
