Sometimes they use all-black puppets against a black screen, with white eyes attached. (See "If Moon Was Cookie", in the shot where Cookie's in the dark.) Last season, they used CG eyes when Abby went into Oscar's can.
From what I've seen, whatever's left over (and then some) is posted on their site. (And I've got no problem with that.) Many of the classic videos that have been unaired for a very long time, and the best part is more stuff is always added.

He posted a few pictures of Muppets that appear to be from the book: Sherlock Hemlock, Betty Lou, and Poco Loco, as well as a picture of Mr. Hooper in his store. That's all I can remember for now.

Yeah, Scott posted those because he won it from eBay a couple of years ago. It would be asking a lot for him to post them since there are so many pages, but he posts images whenever necessary to the Wiki (for character pages, talk page debates, etc.)
According to Muppet Wiki (which got it from the TMS season one Muppet Morsels): "His name is a play on the pasture crop "bird's-foot trefoil," which was familiar to Jim Henson because of his father's work for the U.S. Department of Agriculture."
