I am surmising here, but I'd bet that while some of them were done live, others were prerecorded, and yet others were added in post-production. Of course a lot of it has to do with what "era" of Henson you're referring to.
Also bear in mind that there is a world of difference in sound design...

I do imagine that a good double-stick tape would work, although I think that pins would still be best for the wigs, and maybe even the nose. But for the eyes, double-stick tape would probably be the best solution.

I would not count on velcro holding features onto these puppets very well at all. The polar fleece skin does not have much pile, and hook velcro would not have much to "grab" onto. Even though features might initially stick, once you start manipulating the puppet they'll start flying off.

Actually it is illegal to tape even your own production of a licensed play. It is secifically stated in the performance agreement with (in the case of Little Shop opf Horrors Music Theatre International) that you are not permitted to record any aspect of your production.

There's really NO way to effectively do both the voice and the manuipulation. There is simply too much mass to the puppets to be able to move them at the speed they need and have adequate air for singing and speaking. Not to mention the various postures of manipulating the puppets are not at all...
